Caju – (Cashew Apple)
Most people have never heard of caju or the cashew apple, but it is actually the delicious sweet fruit that grows above the famous cashew nut. In fact, cashew juice is one of the most popular juices in Brazil, and far outsells orange juice in many regions.  Indigenous to the north-east of Brazil and commonly found growing in rainforests and the sandy scrubland of the savannahs.
The cashew apple has a sweet fleshly pulp and is actually not a true fruit. It is really the swollen stalk above where the cashew nut grows.  The fruit is extremely nutritious and also makes one of the best mixers for a caipirinha cocktail (Cashew and Lime)

Nutritionally Caju is packed with vitamin C and is a rich source of minerals, vitamins, and other essential nutrients.  Unsurprisingly, the fruit has been used for centuries by Brazil’s indigenous communities.
