Green Coconut
Coconut palms are widespread throughout the north of Brazil with particular abundance along the tropical coast of Bahia. Green coconut is not to be confused with coconut milk that is actually a bi-product of the flesh of the mature coconut. Whilst coconut milk is good for cooking, the flesh of the young green coconut is simply exceptional as a puree, coulis or dessert ingredient.
